Avocado and Egg Breakfast Tortilla 400 cal

One 100% whole grain tortilla

1/3 avocado

One whole egg

1 teaspoon of coconut oil

Optional: 1/2 lime

1/4 medium-size onion

1/4 bell pepper any color

Optional: 2 teaspoons of fresh cilantro

Optional: a dash of salt

  1. Cut the avocado in half and remove the pit. Scoop the flesh and add to a bowl
  2. Add cilantro, lime juice, salt, and mash with a fork
  3. Peel and chop onions and peppers and add to the mixture
  4. Heat up the tortilla in a skillet over medium-high heat and place aside
  5. Spread avocado mixture onto tortilla
  6. Heat oil in skillet and fry egg to the desired Doneness
